Ski and I were talking this morning that no one on God's green earth has enough time to pay attention to their kid(s), keep up on the housework and the laundry and to put a nice, home-cooked meal on the the table every day. I just don't think it's humanly possible. If you are one of these supermoms, I would love to know how you do it. Me, on the other hand, I have to do all of my cooking on Sunday and I have to cook in bulk. In the last six weeks since I went back to work, I've made Chili, Chicken Wild Rice soup, Pistou soup, Stir Fry, Lasagna each on a different Sunday and we've eaten them almost every day all week. To make it even more exciting, I've doubled the recipes and put half in the freezer. I know it sounds boring (and to an extent, it is) but it's that or eat chips and salsa or take-out for dinner every night. I'm running out of ideas of what to cook in mass quantities next. Any ideas? Or better yet, any ideas on how to make each day have 30 hours instead of 24?
